At our exclusive media tasting, we sampled an array of tantalising new dishes that demonstrate Chef Leung’s knack for drawing inspiration from Chinese art and culture whilst also presenting familiar ingredients and flavours in refreshingly modern ways.

Bo Innovation

The menu begins with Five Oxen, a beef-focused creation influenced by Han Huang’s renowned painting of five bulls. Diners can experience five riveting new preparations of bovine parts including bone marrow, ox fat, fermented milk curd, liver and beef consommé. Next comes the playful Master Q, bringing a beloved Hong Kong comic character to life through an artistic jade-hued scallop and pea terrine garnished with mountain yam and shrimp roe.

Other highlights include the splendid Lotus, pairing tender snow crab with a creamy apple and lotus-root purée accented with lotus-flower vinegar. We also sampled the innovative Bamboo at Work, featuring uniquely salt-roasted bamboo shoot and black truffle, topped tableside with decadent fresh foie-gras shavings. Each dish provides a multifaceted experience that engages the senses on many levels.
